
Ingredients for Spicy Red Chicken
1/2 chicken (marinated with turmeric and salt, half-fried)
2 tbsp dried chili paste (mixed with water)
2-3 tbsp chili sauce
Salt and sugar to taste
1/2 box coconut milk
1-2 cups water
1 lemongrass (bruised)
1 star anise and cinnamon stick
4 large shallots
7 garlic cloves
2 inches ginger
2 tomatoes
Cooking Method
Preparation:
1. Slice 2 shallots, 3 garlic cloves, and 1 inch ginger (set aside)
2. Blend remaining 2 shallots, 4 garlic cloves and 1 inch ginger (set aside)
Cooking Steps:
1. Heat oil and sauté sliced ingredients with star anise, cinnamon, ginger and lemongrass until fragrant
2. Add blended paste and dried chili paste, cook until oil separates
3. Add half-fried chicken and mix well
4. Pour coconut milk and water, bring to boil
5. Add chopped tomatoes
6. Season with salt and sugar to taste
7. Simmer until fully cooked and turn off heat
